One of the cats that “stray-ed” from the original litter at FATCAT Ice Cream Bar found its way to Orchard Central to open up ‘STRAY’. With great ‘purrssion’, this stray cat is eager to share its new love for oriental cuisine but not without its quirky twist. Not forgetting its roots in creating innovative flavours and using bold cooking techniques, it vowed to serve even more impressive, unorthodox food over at its new minimalist and modern bistro on Orchard Central level 4.

THE MAN BEHIND FATCAT, AND NOW – STRAY

It may come as a surprise that chef-owner of FATCAT Ice Cream Bar and later, STRAY by Fatcat, Charles Tan, had trained as a savoury chef. Pastry and desserts were part of his interest back then, but for Charles, with all of his kitchen experience in fine dining restaurant, it is a step back to his roots as he could finally unleash his creativity with flavour pairing and fresh interpretations of traditional Chinese dishes such as ‘Yusheng’ (Louhei), Claypot Rice and Paper-wrapped Chicken.

Other than the experimental savoury dishes, the STRAY team features the best and exciting pastry team members from FATCAT Ice Cream Bar. Each plated dessert is designed and created together by the FATCAT-STRAY team, drawing back from memories of their childhood as well inspirations from their daily lives. Be worried by the creation of As Easy As ABC, Keep Popping Spheres, Black & Gold, and many other desserts that are set to release in the future.
